Cucumber Kimchi

Kimchi, the most populer side dish in korea, some korean drama i wacthed this time, shown some their wealth of korean cuisine. each time i see this drama, they always show proud about their food. one of the side dish. its Kimchi (korean spicy fermented pickle).

I love to eat pickle, so i made my version of kimchi, as person who love pickle. i try to make by adapting kimchi recipe from Maangchi or Youtube because here dont have Gochugaru (Hot pepper Flake) , here have some pepper flake, and im sure the level of spiciness is different (i already try it by myself). i love medium hot kimchi. so i decide to use lil bit of chili pepper flake, and Gochujang. i wish i could make real kimchi. with cucumber and chinnese cabbage.

Yesterday i try adding some mashed dried shrimp, to make it more taste of indonesia. its tasty too. my mother about to love it. and put it in fridge. so it will not spoil soon, and fermented slowly, ready to eat whenever i want to eat with kimchi.

Here some recipe, i adapted from youtube. ppl who love pickle should try to make it 😛

Ingredient:
1 kg any size of cucumber, prefer light/young one
2 tbs Rock salt
2 cm Ginger
2 Clove Garlic
1 Cup Gochugaru (i used indonesia regular pepper flake so its only about 1 tbs)
1 Stake Green onion, Shredded (this time i made i forgot to use Green Onion :happy:)
1 Tbs Dried Shrimp / Anchovies, Smooth Mashed additional (u can add it or not):
1 tbs Hot pepper Paste (Gochujang)

Method:
Cut Cucumber into bite of seizes (see Image), Squeeze it with Rock Salt, till Watery and salty.
Rinse with cold water, and drain the cucumber and set aside.
add Green Union, Garlic, Ginger, Pepper flake, Dried Shrimp, and gochujang.
Mixed it all together in bowl. and squeeze till Mixed well.
Put it into small container, eat right after making.. or Save it for later in fridge.. Kimchi will fermented slowly in fridge and stay fresh

i like to eat kimchi with Indomie instan Noodle and Onion , or serve with hot rice and sesame seed. U can also eat it with Korea Nong shim ramen (Sale in Korea Supermarket or Lottemart).

im dont really like chinese cabbage, soon or later ill try to make Kimchi from Chinese Cabbage.
